How to cut tagliatelle from fresh pasta. This quick and simple video by chef Luke Holder takes us through the process of how to roll and cut pasta using both a machine the traditional hand held method.

Dust the fresh lasagna style sheets, adjust the handle to the cutter so it's on the tagliatelle side and then slowly feed it through using your fingers to keep it straight and guide it in - and you have a very simple, very nice tagliatelle.

With the

spaghetti chitarra it comes with two sides one being tagliatelle the other being linguine. We take our lasagna style sheet and lay it on to the strings then again taking our rolling pin we gently press and roll the pin cutting the pasta. Then we slide the rolling pin rather than rolling which forces the pasta through the wires. Give it a little tap and you have a nice fresh portion of tagliatelle.
