How to roll pasta

The Staff Canteen

Hello, my names Luke Holder and today I’m going to show you how to roll pasta. So we just need to make sure at the very beginning that we give the pasta a width that we can fit into the pasta machine, so from being a dough we roll it into even thickness and then we start it on it’s wider setting, we just run it through, twice on it’s wider setting. One notch at a time, slowly feed it through and run it through twice on either setting. Once laid down, bring one side over fold it over, we’re just going to put it through the machine one more time. Okay so it’s important to remember at this point to set the machine to it’s wider settings, then we’ll get a much more consistent width for the pasta.
