Make a basic pasta dough

In this video we're going to show you how to make a simple pasta dough, so I've already got weighed out 250 grams of pasta flour as a very fine pasta flour and I've got 8 grams of finely ground Maldon sea salt in there, we just going to sieve this out onto the bench, just make a little well in the middle of the flower and then I've got one whole egg and then yolks to make up a total weight of 115 grams here I've also got 5 grams of olive oil in there.

Make sure you scrape out really well so just starting to draw the flour in from around the edges and just mix this into a paste , initially which as we draw more flour in will start to thicken up into a nice dough you can see things are starting to come together now and this will just take a few minutes and needing, rolling it across my fingers to clean the day off my fingers and then just bringing that back in and the feel of it feels a little bit tight and dry, so I am going to go back to my container and we're just going to scrape that right out, now there’s probably only 23 grams in there but it will change the texture of the dough a little and it will just allow you to incorporate those last bits of flour off the bench.

So now the pasta is ready, it feels quite stiff, it's not too soft and we're just going to roll that into a nice neat log, tiny little bit of olive oil just rub the surface with olive oil and this just stop skin forming on it and then just wrap that up in cling film and rest that in the fridge for about half an hour before you use it and there we have our rested pasta dough which is now ready for years.
