The Staff Canteen

Rasmus Kofoed is chef-patron of Geranium, the two Michelin star restaurant in Copenhagen, Denmark. He is The Staff Canteen's featured chef this month.

Rasmus Kofoed is the chef patron of Geranium restaurant in Copenhagen. He trained at the Hotel D’Angleterre in Copenhagen before working at the two-Michelin- star Scolteshof in Belgium. Returning to Copenhagen, he worked as head chef at several top restaurants before opening

his own place, Geranium. In 2010 Rasmus won the Bocuse D’Or Europe and in 2011 the world Bocuse D’Or, becoming the first chef in the world to participate in the competition three times.

Geranium won its first Michelin star in 2012 followed by its second in 2013, an occasion which The Staff Canteen was lucky to witness. Rasmus’s food is light and delicate and inspired by nature and the changing seasons.

Small Contribution. Big Impact.

The Staff Canteen has always been more than a website—it’s a community, built by and for hospitality. We share the wins, the challenges, the graft, and the inspiration that keeps kitchens alive.

We believe in staying open to everyone, but creating this content takes real resources. If you’ve ever found value here—whether it’s a recipe, an interview, or a laugh when you needed it most—consider giving just £3 to keep it going.

A little from you keeps this space free for all. Let’s keep lifting the industry, together.
