What advice would you give to someone just starting out in the industry?

I would tell them to show passion and interest in what they are being taught, it's easier and more fun to teach somebody who's interested.

I was given that advice when I was a Commis.

What are you looking out for on a CV?

On a CV I think they need to try and show a genuine interest in all aspects of food from cooking it to eating. I've interviewed so many commis Chefs who sit there and tell me they don't know what they like to eat or cook.
