The centre cut or rump heart not only can be used for staking but we can string this and use it as a good quality roast. So we just put together and some string or bands just putting those around the joint it's not as if these bands are holding any pieces of meat it's just actually making it a little bit more compact and presentable unlike

string that is tight in the cooking process these bands will actually allow the meat to move and give slightly, so that we don't squeeze the juice out of the finished joint, so that is our joint prepared from the centre cut or the rump heart, alternatively we can cut the piece into steaks.
