Applications now open for Andrew Fairlie Scholarship 2025

Industry charity Hospitality Industry Trust (HIT) Scotland have opened applications for this year’s prestigious Andrew Fairlie Scholarship.

The scholarship provides educational experience, offering first-hand experience in some of the world's most renowned culinary establishments to nurture the next generation of chef talent.

Launched in 2019, the scholarship was created by Andrew Fairlie in partnership with HIT Scotland, with which the late chef was closely associated, to provide premium educational opportunities for up-and-coming chefs in Scotland.

Now in its sixth year, the Andrew Fairlie Scholarship is supported by HIT Scotland, Restaurant Andrew Fairlie, Perth College UHI and The Gleneagles Hotel and is considered Scotland’s finest culinary scholarship.

Money-can't-buy experiences

An all-star panel of the country’s finest chefs will judge the 2025 competition. Lead judge Stephen McLaughlin, head chef at Restaurant Andrew Fairlie, will be joined by Sat Bains, chef patron at Restaurant Sat Bains, and Gary Maclean, a winner of MasterChef: The Professionals and National Chef of Scotland.

The winner of the 2025 Andrew Fairlie Scholarship will be taken on a two-day educational trip to France with Grande Cuisine, gain hands-on experience at the three-star Core by Clare Smyth in London, and undertake a stage at the two-star Restaurant Andrew Fairlie at Gleneagles.

The winner will also receive a bespoke chef’s jacket from Goodfellows as a keepsake of the experience.

How does the competition work?

Candidates must complete an application form, which can be found on the HIT Scotland website here.

The judging process is comprised of two stages, starting with a paper judgement, and culminating in the Grand Final, where the selected finalists take part in a skills test.

During the first round, applicants will need to showcase their creativity, expertise and attention to detail by designing a seasonal two-course meal for four people, the first of which should include homemade pasta containing Shetland mussels and another Scottish bivalve of their choice.

The dessert must be gluten-free and should focus on high quality dark chocolate and poached pear.

Up to six chefs will be chosen to take part in the Finals Day, where they will be tasked with a selection of culinary challenges. The Grand Final will take place on Tuesday, November 25 at Perth College UHI, followed by a presentation to the winner at The Gleneagles Hotel.

The test will focus on the candidates’ technical skills, knowledge, and craftsmanship, with the winner carefully striking a balance between flavour, passion and professionalism throughout.

Applications open today (August 11) and close on September 21.

Andrew Fairlie was Scotland’s only two-Michelin-starred chef and died in January 2019 at the age of 55, after a long battle with a brain tumour.
