Gordon Ramsay to open new restaurant in Cheshire
Gordon Ramsay Restaurants has announced plans to open a new restaurant at The Mere in Cheshire as part of the hotel’s major redevelopment into Fairmont Cheshire.
The new venue, Gordon Ramsay at The Mere, will form the signature dining experience at the property when it relaunches following a multi-million-pound refurbishment and expansion.
The partnership was confirmed in a social media announcement from the Gordon Ramsay Restaurants group, which said the project marks another milestone in the continued global growth of the chef’s hospitality portfolio.
According to the statement, the restaurant will deliver the group’s “hallmark precision, confidence and flavour-led cuisine”, with a concept designed specifically for the setting and its location within the redeveloped hotel.
The Mere, located near Knutsford, is currently undergoing significant transformation as it prepares to reopen under the Fairmont Hotels & Resorts brand as Fairmont Cheshire, The Mere.
The Gordon Ramsay restaurant will serve as the flagship dining offer for the property when it launches later this year.

The announcement comes during a period of continued expansion for Gordon Ramsay Restaurants, which has grown into one of the world’s largest chef-led hospitality groups.
The business now operates across Europe, North America, Asia and the Middle East, with a portfolio spanning fine dining, brasseries, international hotel partnerships and premium casual dining formats.
Gordon Ramsay Restaurants is preparing to open its 100th restaurant globally with the launch of Bread Street Kitchen & Bar at 22 Bishopsgate in London, in May 2026.
The City development will house five Gordon Ramsay concepts under one roof and represents one of the most ambitious projects in the group’s history.
