Les Oeillets (July 20)
Paris’s hottest new wine bar, Les Oeillets, is from Maxime Dardeau and Solal Martin-Grondard. Known for its high-energy atmosphere and wine from small-scale producers, Les Oeillets will feature dishes like pulled-pork rillettes with basque peppers and paimpol white beans with bacon fat croutons.
Co-owners Mark Gurney and Matt Bushnell's love for Paris has influenced both venues. Bar Levan, an homage to the city’s vibrant natural wine bar scene, and Levan, inspired by the European bistronomy movement, were imagined following many trips to Paris.
The visiting venues are a pick of Mark and Matt’s go-to spots in Paris, destinations with shared values in food, wine, and music.
Each Paris à Londres day will begin with the resident team taking over Levan for a full lunch service from 12-4pm, offering a selection of signature dishes and accompanying wines.
A handful of Levan dishes from Head Chef Philip Limpl and wines by the glass will also be available. From 6pm, the festivities will relocate to Bar Levan for more wine, music, and snacks, allowing the guest sommelier to shine with a few of their favourite bottles. Guests can book for lunch, the after party, or both.
