Shackfuyu will be Bone Daddies’ first pop-up restaurant and is set to open this month at 14a Old Compton Street. The regularly changing menu will see Ross Shonhan and his team getting creative, experimenting and serving dishes which will be sure to please the many loyal fans of Bone Daddies Ramen Bar (Soho and Kensington) and Flesh & Buns (Covent Garden).beetroot 1 A short menu will evolve primarily from the use of the previous restaurant’s pizza oven and basement kitchen and will house a selection of small dishes and accompanying sides which will highlight flavours and cuisines currently represented in Japan. Shackfuyu – (‘Shack’ being a rough and ready space and ‘Fuyu’ meaning winter in Japanese – the idea is this residency will open this winter and close the next) is a first for Ross, who is known for his innovative and playful take on Japanese cuisine, particularly ‘drinking food’ served in Japan’s izakayas. Open seven days a week, the pop-up will operate a single-ingredient led main offer changing on an ad hoc basis, luring diners back to the temporary
site for more. The opening menu will feature a roasted picanha of beef with kimchee tare and sides such as mentaiko mac and cheese, cock scratchings and fried potatoes with Japanese curry sauce, although Londoners may expect to find Japanese flavours introduced to whole sea bass, pork hocks or goat at Shackfuyu as the team evolves. red mullet 1Menus will be announced via social media and on the Shackfuyu website, throughout the duration of the pop-up. A short list of snacks will be available, including hamachi tostadas, prawn toast masquerading as okonomiyaki and roasted scallops with spicy miso butter. Ross Shonhan says; “We’ve been waiting a long time for this site, so to have the pop-up finally underway is a really exciting project for Bone Daddies. The smaller menu and temporary site gives us the chance to play with dishes and try something new with our guests, without the usual expectations and boundaries. Hopefully we will create a fun dining event for both existing supporters and those discovering us for the first time”.
