Tom Sellers confirms senior team for MOR in Cornwall

Tom Sellers has confirmed the senior team for MOR, his new restaurant opening at Carbis Bay Estate in St Ives this summer.

The two-Michelin-starred chef patron of Restaurant Story will open MOR on July 20, marking the first opening outside the capital for HiStory Hospitality. Reservations go live on June 4, with priority reservations available from June 2.

The team will be led by Tom alongside long-term collaborator and executive chef Tom Anglesea, with Jack Clayton, formerly of Scarlet Hotel in Newquay, and Corrin Harrison, formerly of Ynyshir and Gwen in Wales, also joining the kitchen.

Katie Russell, formerly of Evelyn’s Table and Elystan Street, has been appointed general manager.

Corrin’s appointment at MOR marks his next confirmed role after leaving Gwen in Machynlleth earlier this year.

He also appeared on Great British Menu this year, winning the fish course before having to pull out of cooking at the banquet due to personal reasons.

A major Cornwall opening

MOR, named after the Cornish word for sea, will be rooted in its coastal setting, overlooking the white sands of Carbis Bay.

The restaurant will be built around a raw bar and charcoal grill, with guests encouraged to choose their own fish from the MOR counter, where the morning’s catch will be displayed.

The menu will change with availability and seasonality, but dishes are expected to include Cornish bream, Mora Farm radish, sweet onion and chive; octopus and shiitake skewer; and dayboat market fish, Cornish earlies, garden salad and house condiments.

Desserts will include Alphonso mango, daiginjo sake and kaffir lime, alongside jasmine rice soft serve, English wasabi and cherry.

Produce will be sourced from MOR’s on-site kitchen garden and Cornish suppliers including Kernow Sashimi, Mora Farm and independent fisherman John Tonks.

Tom is best known as chef patron of Restaurant Story, which opened near London Bridge in 2013.

The restaurant earned its first Michelin star within five months and was awarded a second star in 2021.

His cooking has long been defined by seasonality, storytelling and provenance, with Restaurant Story developing a reputation as one of London’s most distinctive fine dining restaurants.

MOR continues a period of growth for HiStory Hospitality, Tom’s boutique portfolio, which also includes Restaurant Story, Story Cellar, Dovetale and Gwyn’s Bakery.

The Cornwall opening also marks a return to Carbis Bay Estate, where Tom previously staged Story by the Sea in 2019.

The interiors have been designed by Shayne Brady, drawing on Japanese Shintoism and Cornish Celtic mysticism, with natural stone, wood, sheer fabrics and floor-to-ceiling windows designed to connect the restaurant with the surrounding coastline.

Across the restaurant, bar and 14-seat private dining room, the design will include bespoke British craftsmanship, including joinery by Haroys, furniture by Ben Whistler, lighting by Atelier Lighting and soft furnishings by Calico Interiors.

For Tom and the team, MOR represents both a new coastal expression of his food and a significant expansion beyond London.

The restaurant will serve lunch and dinner seven days a week from July 20.
