Chef background
“I started as a kitchen porter while still at school and never left the kitchen.
“I eventually completed an apprenticeship in professional cookery and have since worked in hotels, fine-dining restaurants, and most memorably, Isle of Eriska. One of my career highlights was being part of the team that won a Michelin star, and working at Elements, which was listed in the Michelin Guide only 10 weeks after opening.”

Who and what inspired you to become a chef?
“My uncle was a chef and showed me the ropes early on, but I truly fell into the craft after taking that first kitchen job. I’ve never looked back.”
How would you describe your style of cooking and influences?
“Classic French foundations with Asian influences woven in when the dish calls for it.”
Three ingredients you can’t live without
“Butter, salt, and thyme.”
What you eat when you get back from service
“Noodles and a can of juice is my go-to nearly every night after work.”
Why did you want to take part in MasterChef: The Professionals?
“For my gran. She loved the show, and I wanted to show her what I’d achieved.”
Outside of cooking what are your passions?
“Football (Celtic), snooker, fishing, and travelling to explore new places, cultures and restaurants.”
