Bio: Liam McKay is the owner of The Chef’s Table in Cheshire and has been for 7 months. The Chef’s Table is an independent foodie hub serving seasonal food, second-hand books, original art and eclectic music.

How long have you been in this role?
7 months.
What experience would someone need in order to progress to the top level of the industry?
Gain experience under different chefs with different ideas and techniques and consistently be open to learning.
Be prepared to work long hours for little or no pay.
Be able to apply yourself in different roles, taking and giving orders.
Spend time researching and learning at home as well as in work.
A genuine passion for the path you choose within the industry.
What are your ultimate top tips for someone looking to start a career in the industry?
Be humble
Respect those in a more senior position to you, especially when they are giving you advice
Be the hardest working person in the kitchen, but also effective
Take pride in everything you do from mopping the floor to poaching lobster
Season and taste everything
What are you looking out for on a CV or in an interview if someone was applying to work with you?
We look more at the cover letter and if it's appropriate for us. We could have a chef applying with mountains of experience in amazing restaurants but if they don't seem interested in our business then we aren't as keen on them.
