How to block off a carrot

So, I'm going to show you how to peel and block off a carrot ready for cutting different vegetable cuts. I've washed my carrots already and I'm going to top and tail them, so were just going to cut off the ends and then were going to peel the carrots, so just working right the way round, I find it easier to top and tail them first, and then the peeler slots onto the square end of the carrot and then you can just work your way around like so.

We're then going to cut the carrot into lengths at round about 40 MM is the fairly standard length for most of your vegetable cuts so were just going to trim that up into 3 lengths and then were going to square this off ready for doing things like julienne, and maccedoin and so on so I'm just going to work around just squaring my carrot up, trim can go in the bowl can be used for carrot soup something like that, doesn't necessarily have to be wastage. 

So just working round into the blocks and the difficult cut is the first one because the carrot is obviously rolling still so just be very careful holding it firm and then running the knife up and down your knuckles with your fingers tucked well underneath well out of the way, and that's our blocked off carrots ready for cutting our veg.
