Which restaurants were in the AA Restaurant Guide 2021? Which restaurants won rosettes?

The AA Restaurant Guide was published in October 2020. No new restaurants were awarded the coveted five rosettes, but Muse by Tom Aikens and The Ritz both received four AA Rosettes, and 26 restaurants picked up three rosettes, including The Fat Duck alumnis' new Bermondsey restaurant, Trivet, as did Stockport's Where The Light Gets, Shaun Rankin at Grantley Hall and Daniel Humm's acclaimed opening at Claridge's Davies & Brook.

When will the AA Restaurant Guide 2022 be released?

The AA has yet to confirm a date for the publication of its guide for 2022, but in previous years it has been known to hold an awards ceremony for its release in September of the previous year.

AA Rosette Criteria

To gain a coveted rosette in the AA Hotel, Restaurant and Pub Guide, patrons need to show true skill and understanding when prepping food as well as using fresh ingredients in all of their dishes.

In its own industry guidelines, it says that it is of "paramount importance to always serve your market first." to avoid chasing accolades and rather see them as cause for celebration when they do come along.

One AA Rosette restaurants

A single rosette, of which 50% of the restaurants listed in the AA Restaurant Guide are recipients, is given to establishments serving "food prepared with care, understanding and skill, using good quality ingredients."

Two AA Rosette restaurants

According to the AA criteria, two rosettes are given to "Excellent restaurants, which aim for and achieve higher standards, better consistency and where a greater precision is apparent in the cooking," as well as fulfilling the conditions for one rosette.

Three AA Rosette restaurants

The guide says that to be deserving of three rosettes, restaurants must "achieve standards that demand national
recognition well beyond their local area," with cooking"underpinned by the selection and sympathetic treatment of the highest quality ingredients, with timing, seasoning and the judgment of flavour combinations "consistently excellent," and supported by other elements making up a great experience, such as "intuitive service and a well-chosen
wine list."

Four AA Rosette restaurants

Four AA rosettes are given to those "amongst the top restaurants in the UK," the guide says, "where the cooking demands national recognition."

These restaurants "will exhibit intense ambition, a passion for excellence, superb technical skills and remarkable consistency," combining appreciation of culinary traditions with a passionate desire for further exploration and improvement."

Five AA Rosette restaurants

Reserved for the crème de la crème of restaurants, five aa rosettes are given to establishments "where the cooking compares with the best in the world." The guide requires that these have "highly individual voices, exhibit breathtaking culinary skills and set the standards to which others aspire to, yet few achieve."

When are AA Rosettes awarded?  Are AA Rosettes given to the chef or the restaurant?

1 and 2 Rosettes are awarded at the time of inspection;  3 and 4 Rosette awards are announced twice a year and never at the time of inspection, and finally, 5 Rosettes are awarded just the once during a year and never at the time of inspection.

Rosettes are suspended should a chef leave the establishment where they were working at the time it was awarded. They do not remain for the restaurant, nor does a chef take them with them elsewhere.
