Warming, spiced curry sauce is enriched with coconut milk, ginger, curry leaves, and scampi shells, bringing the salty, sweet, sour, and umami flavours. Curry leaf oil floats on the surface of the coconut curry sauce, adding a pop of colour and enhancing the flavour and piquancy.ย
ย This incredible scampi recipe came about by my experimentation and is damn so good! Thanks to my ongoing culinary learning and the unique cooking method, the scampi meat was perfectly moist, delicate and sweet. A unique recipe like no other, this refined dish is soon to feature on my multi-course tasting menu.ย
ย As with my contemporary culinary style, it is not claimed to be typically Sri Lankan but a fusion of techniques and ideas I discovered from my travels and continuous learning.
