- 2 whole mackerel filleted, pin boned and cleaned
- 2 oysters
- 50 ml soy sauce
- 25ml water
- Juice of 1 lemon
- 1 head of celeriac
- 1 head of fennel
- 1 lime
- 1 lemon
- Dill
- Dill pollen

Method
Cut the mackerel into desired shape, blend the oyster with the soy , water and lemon juice. Pour over the mackerel and allow to marinade for 1 hour. Drain and pat dry
Finely cut the celeriac and fennel into matchstick fine pieces and mix with the zest and juice of the lemon and lime and a pinch of salt, allow to rest for 15 minutes .
To serve place mackerel on the plate, chop the dill and mix through the celeriac and fennel, add the pollen . place some next to the mackerel and serve.
