  • 210g Pasteurised Egg Yolks
  • 5g Salt
  • Chickpea Wafer
  • 250g KTC Gram Flour
  • 900g Water
  • 10g Chopped Rosemary
  • 10g Saltteurised Egg Yolks
  • 5g Salt
  • Gherkin Gel
  • 300g Gherkins
  • 200g Gherkin Liquor
  • 20g Sugar
  • 5g Agar Agar
  • Beef Tar Tar
  • 200g Diced Bavette
  • 20g Good Rapeseed Oil
  • 5g Maldon Salt
  • 2g Black Pepper
  • Shimeji Pickle
  • 100g Soy
  • 25g Mirin
  • 135g Rice Wine Vinegar
  • Salt
  • Sesame Oil to Fry
  • Coal Oil
  • 185g Coal (Burnt)
  • 385g Oil
