- For the American Style Pancakes:
- 3tsp Baking Powder
- pinch of salt
- 260g Self raising flour
- 3tbsp caster sugar
- 2 eggs
- 30 melted butter
- 280ml milk
- For the Maple Syrup Butter:
- 400g maple syrup
- 250g butter, cut into small cubes.
- Optional:
- Bacon
- Strawberries or Blueberries

American Style Pancakes with Maple Syrup Butter and Bacon

Makes 8-10 portions
Ingredients
Method
For the American Style Pancakes:
Mix all the dry ingredients ie baking powder, salt, sugar and flour together.
Gradually add melted butter, eggs and milk.
Beat until it’s a lovely thick batter.
Can refrigerate for up 3 days.
For the Maple Syrup Butter:
Bring syrup to the boil. Cook for 5 minutes and then add the cubed butter gradually.
Transfer mixture to a bowl and mix until it cools down.
Can keep for up to a month, if you haven’t drank it all before.
To Serve:
Spoon in the batter into a medium hot frying pan. Fry on both sides until golden and delicious.
Lay 3 pancakes on top of each other, followed by some sliced strawberries or blueberries, crispy streaky bacon and top with the maple syrup butter.
