Chedder cheese royale

Lovely accompinament


  • 7 eggs
  • 1 litre whipping cream
  • 450g mature chedder
  • Salt
  • White pepper


Scald cream
Add grated cheese to cream and stir
Beat eggs
Pour cream on eggs and whisk together
Season mix
Line a gastro tray with cling film
Pass mix in too tray through a fine chinois
Cook in oven at 80 degrees till just set
