Chocolate Moeleaux

This is similar to and recipe can be used for a fondant

Ingredients

  • 250g Unsalted butter
  • 250g Bitter chocolate 70%
  • 5 egg yolks
  • 5 whole eggs
  • 250g sugar
  • 70g plain flour
  • Butter for greasing
  • Coco powder for dusting

Method

For Moeleaux
Brush presentation bowls with butter and dust with coco
For fondants:
Brush dariole moulds or metal rings with melted butter using upward strokes
Dust with coco powder
Melt butter and chocolate in bain marie
Whisk eggs and sugar till light, fluffy and pale
Whisk flour in to butter and chocolate till smooth
Fold all ingredient together
Fill moulds and chill
Place in oven at 180 for 9 mins
Serve along side ice cream
Or tip out for fondant
