Method
Steam potatoes in skins til soft
Peel potatoes
Rice the potatoes
Place the potatoes on a bench and make a well on the middle
Whisk the eggs and place in the well
Mix the potatoes and egg together
Once the eggs and potatoes are mixed add the flour bit by bit
Once the flour is mixed in cut into sizeable pieces
Roll out each piece and cut into 1 inch pieces and roll in semolina or rice flour
Chill
To cook place in salted boiling water once the gnocchi is cooked they will float
