Mad Hatters Afternoon Tea: Lemon Drizzle Cake

Sanderson Hotel invites guests to discover a tea party full of imagination, inspired by the whimsical world of Alice In Wonderland. Winner of an ‘Award of Excellence Highly Commended’ at the recent Afternoon Tea Awards, the Mad Hatters Afternoon Tea includes treats bursting with flavour such as Cornish crab brioche roll with spiced avocado and coriander and Mad March hare vanilla pocket watch macaroon, all priced at £48 per person. This is the perfect option for those wanting a quirky and whimsical edge for National Afternoon Tea Week.

Ingredients

  • Makes 21 servings:
  • 150g Ground almond
  • 100g Plain flour
  • 300g Sugar
  • 250g Egg whites
  • 200g Melted butter
  • 2.5g Yellow colouring
  • 50L Lemon furee
  • 1 Lemon (lemon peel grated)

Method

1. Whisk sugar, ground almonds and eggs, together
2. Add the flour to the dry mix.
3. Pour slowly the egg whites and the lemon juice. Keep mixing until smooth.
4. Add the colour and lemon peel
5. Add the butter and keep mixing until shiny
6. Pour into a piping bag and pipe into individual moulds
7. Bake at 165c for 26 minutes
