Moroccan minced beef pie

British Pie Week is coming soon! (4th-10th March 2019) This quick and easy 'pie' recipe is made with lean minced beef and harissa paste.

Ingredients

  • Total time: 30 minutes
  • Serves: 4
  • 400g pack lean minced beef
  • 1 onion, chopped
  • 4 tsp harissa paste
  • 400g can chickpeas, drained and rinsed
  • 400g can chopped tomatoes
  • 400ml hot beef stock
  • 150g wholewheat Couscous
  • ½ x 28g pack coriander, chopped

Method

1. Preheat the oven to 200°C, gas mark 6. Fry the beef and onion to brown. Add the harissa paste and cook for 1-2 minutes. Stir in the chickpeas, tomatoes and 100ml stock, cover and cook for 5-6 minutes. Transfer to an ovenproof serving dish.
2. Meanwhile, place the couscous in a bowl, add the remaining hot stock, cover and leave for 5 minutes. Fluff up with a fork and add the fresh coriander, spoon over the beef mince and bake for 20 minutes.
