Peaches on Sourdough Toast

(To serve 4 as a starter or light lunch)
Ripe, juicy peaches are the perfect summer fruit. Here's an easy peach recipe from Lupins of London.

Ingredients

  • 4 slices of sourdough (a nice crunchy one from a bakery is best)
  • 350g ricotta
  • 20g fresh oregano
  • Zest 1 lemon
  • Salt and pepper to taste
  • Extra virgin olive oil
  • 2 large ripe peaches
  • 75ml London honey company Salisbury honey. (Or a nice blossom honey)
  • A few handfuls of Rocket

Method

1. Mix ricotta, oregano, lemon zest. Season to taste
2. Slice peaches in to 8 and fry to coloured on both sides in a dry frying pan or griddle
3. Drizzle both sides of the sourdough with olive oil and toast under grill till a little charred on both sides
4. Spread ricotta on easy slice, add the slices of peach and a small handful of rocket to each slice. Drizzle with honey and olive oil and serve warm.
