- 4 slices of sourdough (a nice crunchy one from a bakery is best)
- 350g ricotta
- 20g fresh oregano
- Zest 1 lemon
- Salt and pepper to taste
- Extra virgin olive oil
- 2 large ripe peaches
- 75ml London honey company Salisbury honey. (Or a nice blossom honey)
- A few handfuls of Rocket

Peaches on Sourdough Toast
(To serve 4 as a starter or light lunch)
Ripe, juicy peaches are the perfect summer fruit. Here's an easy peach recipe from Lupins of London.
Ingredients
Method
1. Mix ricotta, oregano, lemon zest. Season to taste
2. Slice peaches in to 8 and fry to coloured on both sides in a dry frying pan or griddle
3. Drizzle both sides of the sourdough with olive oil and toast under grill till a little charred on both sides
4. Spread ricotta on easy slice, add the slices of peach and a small handful of rocket to each slice. Drizzle with honey and olive oil and serve warm.
