Sauté potato, bacon and artichoke salad

Young chef, 1st post

Ingredients

  • 6 halfed artichokes
  • 6 rashers of bacon
  • 8 new potatoes
  • Fresh salad leaves
  • Wholegrain mustard dressing

Method

Slice and sauté new potatoes in butter until golden
Fry/grill the rashers of bacon
Add the halfed artichokes to the sauté potatoes to warm through
Slice the bacon into strips
In a salad bowl put in the salad leaves and add all the other ingredients, add the dressing and toss the salad until thoroughly mixed.
Serves 2.
