- 440g grated carrots
- 440g dates
- 1.5l water
- 250g butter
- 875g castor sugar
- 10 eggs
- 875g self raising flour
- 40g baking powder
- 40g bicarbonate soda
- 1 tsp Cinnamon
- 1 tsp Cloves

Method
Place the dates, grated carrots & water in a pan and cook down until dates and carrots are soft. Leave to cool down. Place the butter, cream & sugar in a mixing bowl, gradually add the eggs, then fold in the flour, cinnamon and cloves. Then add baking powder & bicarbonate soda into the mixture and finally add your cooked dates & carrots. Line your baking tray with butter & flour and pour in the mixture up to 2/3rds of the tray. Bake in 160 degrees for 20-30 minutes & enjoy fresh from the oven!
