agar agar pearls

simple agar pearl recipe.

Ingredients

  • clear thin stock
  • 1.5% agar agar
  • A large tub of oil

Method

Place your tub of oil into the freezer till really cold!
Bring stock to a simmer. (must be a thin stock)
Add agar agar and whisk till dissolved (1.5% agar to stock)
place into a piping bag (making sure you tie up the top or it will get messy)
cut a small hole and in a circular motion squeeze the piping bag so small droplets fall into the oil.
Place oil in the fridge leave for around 1hr to make sure they set well. place between 2 cloths on a tray to soak up the oil and bobs your uncle :)
