  • 1/4 gelatine leaf (soaked)
  • 20 g. lemon juice
  • 4 g. salt
  • black pepper

  • 105 g. Plain flour
  • 5 g. Fresh yeast
  • 5 g. Grated parmesan
  • 10 g. Olive oil
  • 2 g. Salt
  • 2 g. Sugar
  • 45 g. Water
  • Asparagus Juice
  • Asparagus bottoms
  • Chardonnay vinegar
  • Xantana gum
  • Salt
  • Pepper

Method

Parmesan Snow
250 g. grated parmesan
500 g. Water
1/4 gelatine leaf (soaked)
