  • 5 g. Fresh yeast

  • 10 g. Olive oil
  • 2 g. Salt
  • 2 g. Sugar
  • 45 g. Water
  • Asparagus Juice
  • Asparagus bottoms
  • Chardonnay vinegar
  • Xantana gum
  • Salt
  • Pepper

Method

Parmesan Snow
250 g. grated parmesan
