BBQ Marinated Rump of Lamb

Place the bulbs of garlic on to a tray with rock salt and bake in a pre heated oven @140c for 40 mins. Remove from the oven and allow to cool. Squeeze the soft roasted garlic centres out of their skins and place in a blender with the mint jelly, peanut oil and coriander (including stalks) blend thoroughly. Marinate the lamb rumps for at least 24hrs. Then BBQ over hot coals for 12 -15 minutes turning the rumps every 3 minutes or so.
