South African BBQ Halloumi Wrap

BBQ wraps with grilled halloumi, roasted sweet potato, South African braai sauce and garlic yoghurt.

Ingredients

10 portions

  • 1.2 kg halloumi cheese, cut into 2.5 cm cubes
  • 1.5 kg sweet potatoes, peeled and cut into 2.5 cm cubes
  • 4 large red onions, cut into wedges
  • 3 large red bell peppers, cut into 2.5 cm pieces
  • 400 g plum tomatoes
  • 3+2 tbsp olive oil
  • 1 lemon, zest and juice
  • 20 Santa Maria 10’’ (25cm) Tortilla Wrap
  • 200g mâche lettuce, rocket or baby spinach leaves
  • 300 ml Greek yoghurt
  • 4 cloves garlic, minced
  • 200 ml Santa Maria South African Braai Style BBQ Sauce (200933)
  • Santa Maria Chili Explosion (to taste) (41437)

Method

Preparation

Preheat your oven to 200°C (fan 180°C).
Place the prepared vegetables; sweet potato wedges, bell peppers, tomatoes and onion on a baking tray. Drizzle with 3 tbsp olive oil, sprinkle with smoked paprika, ground cumin, salt, and pepper. Toss to coat.

Haloumi Skewers

Thread the halloumi cubes, red onions, bell peppers, and cherry tomatoes onto soaked wooden skewers (or metal skewers), alternating ingredients for colour and flavour.
Mix olive oil with the minced garlic, lemon zest, and lemon juice. Brush over the skewe

Assembly

Grill the tortillas pan or skillet.
To serve, drizzle with BBQ sauce on the tortilla and lay a few salad leaves on each tortilla, top with roasted veggies, then add halloumi skewers (remove from the sticks), finally drizzle with the yoghurt garlic sauce.
