Posne punjene paprike – Peppers filled with mushrooms and rice

90 min

Peppers filled with mushrooms and rice, a meat-free dish from The Grand Heritage Cookbook (Recipe 089, The Hilandar-inspired table). Serves 4. Prep 30 min, cook 60 min. Mushrooms give substance to the filling without meat.

Ingredients

  • 800 g small peppers (8)
  • 180 g rice
  • 350 g mushroom
  • 180 g onion
  • 35 g olive oil
  • 350 g passata
  • 5 g salt
  • 1 g pepper
  • 500 ml water

Method

Remove pepper caps and seeds. Chop onion and mushrooms finely, then rinse rice.
Cook onion in oil for 8 minutes. Add mushrooms and cook until their moisture evaporates, then stir in rice, half the salt and pepper.
Fill peppers three-quarters full and stand in a snug pot. Replace caps loosely.
Mix passata, water and remaining salt and pour around the peppers. Cover and simmer for 50-60 minutes.
Check the rice inside one pepper for tenderness. Rest for 10 minutes and serve two peppers per person.
