- 30 Egg Yolks
- 30 Tsp Caster Sugar
- 3 Vanilla Pods
- 7 Shots of Calvados
- 3 Lt Cream
- Ramekins

Method
Whisk the egg yolks
Add the caster sugar, vanilla, calvados
Heat the cream when hot enough add slowly to the egg mixture whisking continuously
Add mixture to the ramekins and place in a Bain Marie
Burn off the bubbles and cook in the oven for 1 Hour at 100c
