Cod with parsnip purée and cucumber by Simon Hulstone

Ingredients

  • Parsnip puree
  • 600g parsnips
  • 300g double cream
  • 100g unsalted butter
  • Salt and pepper
  • Cod
  • Cucumber

Method

Parsnip purée

Finely chop the peeled parsnips and pour all ingredients into the robot cook.

Set temp at 90c and speed at low.

Allow to cook this will take approx 10 minutes.

Once soft turn the robot cook onto full power and puree .

Remove from the machine and pass through a fine sieve.

Season and set aside.

Cook the cod to order, garnish and serve with purée
