Grilled Pork Chop, Sour Fruits & Herb Salad

Ingredients

Pork Chop

  • 1 pork chop
  • ½ tsp white peppercorn
  • 1 tsp maldon
  • 1 tbsp coriander root
  • 2 tbsp garlic
  • 1½ tbsp honey
  • 100g coconut cream
  • 2 tbsp fish sauce

Sea Buckthorn Dressing

  • 1 long red chilli, seeds removed
  • 2 red bird’s eye chilli
  • 1 tbsp coriander root
  • 1 tbsp garlic
  • ½ tsp maldon
  • 4 tbsp sea buckthorn juice
  • 1 tbsp lime juice
  • 2½ tbsp fish sauce
  • 2 tbsp honey

Sour Fruit & Herb Salad

  • 3 tbsp sour fruits (green apple, gooseberry, unripe stone fruit)
  • 3 tbsp mixed herbs (coriander, mint, sweet basil, apple marigold, nasturtium)
  • 1 tbsp lemongrass, sliced
  • 1 makrut lime leaf, sliced
  • 1 tbsp shallot, sliced
  • ½ tbsp roasted hazelnuts

Method

Pork Chop

Make the pork chop marinade by combining all the ingredients.
Cook the pork chop over a charcoal grill while basting liberally with the marinade. Rest well in a warm spot on the grill.

Sea Buckthorn Dressing

Make the sea buckthorn dressing in a stone pestle and mortar until smooth.

Sour Fruit & Herb Salad

Combine the sour fruits and salad ingredients in a bowl. Combine with the sea buckthorn dressing.

Plating

Carve pork chop, season with maldon and transfer to a serving plate.
Top with the dressed sour fruit and herb salad, garnishing with roasted hazelnuts
