Kale Slaw

Kale Slaw - This is a great alternative to traditional coleslaw. It is much lighter due to using créme fraîche instead of mayonnaise. It goes perfectly with our smoked and braised beef short rib, with a generous helping of polenta chips too!

Ingredients

  • 100g kale, finely sliced
  • 1 small red onion, peeled and finely sliced
  • 1 large carrot, peeled and grated
  • 50g créme fraîche
  • ½ tsp salt
  • Freshly milled pepper
  • ½ lemon, juice and zest

Method

Mix the kale, onion and carrot together.

Mix the créme fraîche with the lemon juice and zest, salt and pepper.

Fold the vegetables into the créme fraîche mix when ready to serve.
