Our Brown Soda Bread

Based on an original Cork recipe (via Galway), and adapted for smaller use. Aidan's original recipe makes 60 loaves! We have so many requests for the recipe, it's now printed out at Reception!

Ingredients

  • 3 1/2 lb Wholemeal flour
  • 1 lb Plain flour
  • 2oz Bran
  • 2oz Wheatgerm
  • salt
  • 3 tbls bicarbonate soda
  • 4 eggs
  • 1 cup of vegetable oil
  • 11/2 – 2 litres of buttermilk
  • 5 oz brown sugar

Method

Simplicity itself! Mix dry ingredients together, pour in wet ingredients, mix to a sloppy dough. Put in oiled, warm loaf tins, bake in the oven at 185°c for 20 minutes and then reduce the heat to 150°c for a further 25-30 minutes, or till done! Turn out and bake for 5 mins. more- Enjoy!
