Pear and Sesame Dressing

PLACE, SOY, MIRIN, SAKE, WATER AND CASTOR SUGAR INTO A SAUCE PAN, GRADUALLY

Ingredients

  • 1 Litre SOY SAUCE
  • 1 Litre MIRIN
  • 1 Litre SAKE
  • 3 Litres WATER
  • 1kg CASTOR SUGAR
  • 75g GRATED GINGER
  • 20g SLICED GARLIC
  • 500g SLICED ONION
  • TO FINISH
  • 250ml ROAST SESAME OIL
  • 6 WHOLE PEARS - SLICED ( including skin & seeds )
  • 3 TABLESPOONS ROAST WHITE SEAME SEEDS

Method

PLACE, SOY, MIRIN, SAKE, WATER AND CASTOR SUGAR INTO A SAUCE PAN, GRADUALLY
BRING TO THE BOIL AND STIR WELL TO PREVENT SUGAR STICKING.
WHEN BOILED ADD THE GRATED GINGER AND FINELY SLICED GARLIC AND SLICED ONION.
SIMMER FOR 1 HOUR UNTIL SLIGHTLY THICKER, THEN PASS THROUGH A FINE SIEVE.
NOW ADD THE SLICED PEARS, SESAME OIL AND ROAST SESAME SEEDS. ALLOW TO COOL
BEFORE DATE AND LABELLING. REFRIGERATE ONCE MADE.
