Russell Bateman's beautiful recipe for Teriyaki Sauce that he teamed up with Dingley Dell Pork Belly Brine demonstrated at the last Flying Visit event at Titchwell Manor on the 5th December 2012.

  • Ingredients:
  • 480g Clear Honey
  • 240g Mirin
  • 240g Dry Sake
  • 240g Dark Soy Sauce
  • 18g Ginger
  • 12g Garlic
  • 120g Sesame Oil
  • 2 Star Anise
  • 120g Fresh Lime Juice

Method

Method:
Bring everything to the boil.
Once reduced by half, pass through a Fine Sieve.
Continue to reduce to 850g and place in a squeezy bottle.
