Salad
- 3 fresh beets
- 25g walnuts
- 80g feta cheese
- 3 tbsp fresh pomegranate seeds
- 3 tbsp chickpeas
- 2 tbsp of extra virgin olive oil
- 1 tbsp pomegranate molasses
- 1/2 tsp coarse salt
- 1/2 tsp sumac
- Few leaves of lemon balm to garnish

salad
Cook the beets until soft and tender than peel and cut into wedges
Dice the feta cheese into cubes
dressing
mix the virgin olive oil, pomegranate molasses, salt and sumac
assembly
Add the walnuts, feta, chickpeas and pomegranate seeds to the beets then pour over the dressing and mix
