Smoked Beetroot Skewer

Note: Marinade over night 

Ingredients

Beetroot Marinade

  • 2 beetroots
  • 20 grams Hoisin
  • 20 grams Soy sauce
  • 100 grams Oil
  • 10 ml Tamari
  • 100 ml strong black coffee
  • 20 ml Rice vinegar

Method

Beetroot Marinade

1. Marinate one raw beetroot overnight in soy sauce, hoisin, oil, tamari, coffee, and rice vinegar.
2. Cook the marinated beetroot in a smoker or oven at 175°C for about 2 hours or until soft.
3. Once the smoked beetroot is cooked, cut into chunky pieces and put on a skewer and grill, basting every now and then.
4. Slice the second raw beetroot on a Japanese-style slicer and use the same marinade.
5. Serve with a blended white bean and preserved lemon puree, along with fresh herbs.
