- 50g of fresh corriander
- 100 ml of cider vinegar
- 50ml tamarin paste
- 50ml fish sauce

2. Blitz chilli peppers, red pepper, lemon grass, garlic and coriander
3. Make a syrup from sugar and cider vinegar
4. Add blitzed stuff to syrup then leave to cool
