Smoked Chilli Jam

A sweet smoked chilli jam


  • 1 Red Pepper
  • 2 chilli peppers
  • 1 stick of lemon grass
  • juice of 4 limes
  • 4 cloves of garlic
  • 100 g of caster sugar
  • 50g of fresh corriander
  • 100 ml of cider vinegar
  • 50ml tamarin paste
  • 50ml fish sauce


1. Smoke pepper, chilli peppers and garlic
2. Blitz chilli peppers, red pepper, lemon grass, garlic and coriander
3. Make a syrup from sugar and cider vinegar
4. Add blitzed stuff to syrup then leave to cool
