Strawberry Jus

Ingredients

  • 1.5kg Strawberries
  • 150 Caster Sugar
  • 2 vanilla Pods (Split, seeds scraped out)
  • 1 Lemon Zest
  • 2 Table Spoons Pink Peppercorns

Method

Slice all the straweberrys thinly, add all your other ingredients.. Put over a Ban Barie and let it simmer for 45 minutes to an hour. Then let it drip through a chinois, in the fridge, preferably overnight.
