Szechwan pepper crusted tuna, wasabi mayo

For Tuna

Ingredients

  • For tuna:
  • 2 tablespoon of black peppercorns, ground
  • 1 tablespoon of ground Szechwan pepper, roasted
  • 1 tablespoon roast ground coriander seeds
  • 1 large dried chilli deseeded roasted and ground
  • 1 table spoon ground onion powder
  • 1 tablespoon rock salt
  • Wasabi Mayo
  • 200g wasabi powder, make to a paste
  • 10 egg yolk
  • 200ml lime juice
  • 200ml rice wine vinegar
  • 200ml soy sauce
  • Large pinch sugar
  • Salt and pepper
  • 2500ml sunflower oil
  • Salad
  • Baby watercress, sliced spring onion, sliced avocado, pickled ginger, sesame seeds.

Method

For Tuna
Cut tuna into batons, spread with oil, roll in spice mix. Sear tuna in very hot pan on all sides. Wrap in cling film and keep in fridge.
For Mayo
Blend everything in thermo except oil. When smooth pour in oil slowly, making like mayo, adding water when it gets too thick.
For Salad
Baby watercress, sliced spring onion, sliced avocado, pickled ginger, sesame seeds.
