Tomato essence

A delicious sauce.

Ingredients

  • 3kg ripe vine tomatoes 1 stick celery 1 cucumber 1 shallot 2 cloves garlic 10 black peppercorns 20 coriander seeds 1 star anise sprig of basil/parsley/coriander balance to taste with salt, sugar, white wine vinegar, tobacco.

Method

Coarsely blitz the tomatoes and place in large mixing bowl.
Finely blitz celery, cucumber, shallots, garlic, herbs and spices. Add to the tomatoes.
Season and balance with the remainder of the ingredients.
Leave to marinate overnight in the fridge.
Strain through muslin cloth the following day.
