Trio of New Season Claremont Farm ''Elsanta'' Strawberries

Ingredients

  • 1 punnet of Elsanta strawberries,
  • 100g sugar,
  • 20g basil,
  • 20g elderflower,
  • 50g plain flour,
  • butter,
  • 1 egg,
  • 50g glucose syrup

Method

The tart has a sweet pastry base, filled with creme patisserie, sorbet is the juice from the strawberries with fresh elderflower and glucose is added so once the sorbet is formed, it is still scoopable. The soup is made from the juices of the strawberries with basil infused into it
