Vanilla Ice Cream

Okay so this is my basic vanilla ice cream recipe, works well in a pacojet or a churner but trued today with dry ice and worked well too! I'm very new to this career only 3 years experience so please be gentle!

Ingredients

  • 1pt Whole Milk
  • 4 egg yolks
  • 4oz Vanilla Sugar
  • 2 Vanilla Pods
  • 1tbsp Vanilla Syrup

Method

Whisk together egg yolks and sugar and vanilla seeds.
Boil Milk with vanilla pod.
Add milk to egg yolks mix and whisk together.
Return to clean pan and gently cook to 72oC
Strain through chinois and chill accordingly before freezing.
