A veganised twist on the viral salmon and rice video
Plant-based seasoning brand, Yondu, has created a healthy and quick meal which is a twist on the viral TikTok video of salmon and rice created by the influencer, Emily Mariko.
The meal is easy and includes the signature microwaving of an ice cube as well as mashing up some leftover protein (in this case tofu) and rice. The final creation mirrors a Korean Jumeok Bap and is full of flavour thanks to Yondu’s Vegetable Umami.

Method
Place an ice cube on top of the mix and cover with parchment paper
Heat in the microwave oven for 2 minutes. Remove the ice cube.
Drizzle Yondu and sesame oil and stir well.
Cut slices of spring onion and fresh chilli and sprinkle over the rice using scissors.
Add sliced avocado and kimchi.
Sprinkle sesame seeds.
Use crispy seaweed to wrap some rice, kimchi and avocado with your hand in every bite.
