Jonnie Boer, chef patron of De Librije, is one of the finest Dutch chefs. We are delighted to talk about Boer's restaurant and to have such a highly regarded chef as this month's featured chef.

Jonnie Boer took over three Michelin-starred De Librije with his wife Thérèse Boer in 1992, having cooked there since 1989. His third star was awarded and has been retained since 2004.

In 1995 De Librije joined the Alliance Gastronomique Neerlandaise - Holland's most prestigious culinary association which aim is to develop, guard

and promote our national culinary heritage.' In 1997, the publishing house of Waanders launched the first book, Pure. In the same year Jonnie was promoted as Chef de Cuisine and Thérèse became Cellar Master. In 2001, the Purer Cookbook, our second book, was published, followed two years later by the Purely Natural and Natural Enjoyment. The latest book, PUURST, was published on June 3rd 2012, completing the trilogy and recently won ‘Best Chef Cookbook’ 2013, awarded by the Gourmand World Cookbook awards.
