We feature some of the best chef’s in the world on The Staff Canteen but where would they be without their kitchen porter?
We thought it was time to celebrate the unsung heroes of the kitchen in a new monthly feature, KP of the Month, and this month it is Dave Greenman who currently works at The Half Moon in Bridport, Dorset. Dave was nominated by head chef, Dan Clark, who said: "He's a hard working genuine bloke, nothing is ever too much trouble for him. We took over in May and he has helped Cami and myself no end, the nomination seemed like the perfect way to say thank you, being selected is the icing on the cake!"

How long have you worked at The Half Moon for?
I have been a KP for two years and I’ve worked for The Half Moon since the pub was taken over six months ago.
Why did you want to be a KP?
I wanted to change jobs and felt that the kitchen was full of the best opportunities.
Are you interested in cooking or happy to stay as a KP?
I am happy to work on the dessert section, which I’ve been told I do very well but I would never want to work in the main kitchen as I love the sink too much!
What is it like to work at The Half Moon, and what is Dan like as a boss?
It's a good laugh at The Half Moon, we've got a good team, genuinely, Dan is the best chef I have ever worked with in terms of respecting and looking after his team and delivering his promise of improving the pub. We won an award after only 11 weeks of his takeover! That's a good feeling.
As a KP, what’s the most annoying thing chefs do in the kitchen?
When they are in my section and getting in my way stopping me from doing my job!
KP Heaven and Hell
Heaven
The banter is strong in our kitchen. Myself and Dan have a great laugh which makes things more enjoyable. A happy team is a productive team.
Hell
Front of house dump the plates and run instead of stacking them, except Cami (Dan’s partner) as she makes the effort to set the standard.
Is there anything chefs could do to make your life easier?
They could help by ordering my supplies on time, I don't want to bring it up I'm still waiting for a new mop.
And do you get to try the food?
That must be a perk! Yes! I have tried most of the menu at some point and all of the food has great flavour and the dishes are well thought out. I've even been in on my days off as a paying customer with my girlfriend.
Do you have a favourite dish you have tried at the restaurant?
Dan’s new fish curry on the December menu is particularly memorable very tasty and an excellent portion goes really well with a pint of cider...apparently.
Would you encourage other chefs to nominate and celebrate their KPs?
I definitely would, the KP is often overlooked, this is a great way to show appreciation for all of their hard work and I would recommend anybody in the position to be able to nominate to do so as it's well worth it.
